1.In a medium saucepan, combine the milk, cream, sugar, cinnamon, nutmeg, and salt. Heat over medium heat until the mixture reaches a gentle simmer, stirring occasionally.

2.In a separate bowl, whisk the egg yolks until smooth. Slowly pour about 1/2 cup of the hot milk mixture into the egg yolks, whisking constantly to temper the yolks.

3.Pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over medium-low heat, stirring constantly, until the mixture thickens and coats the back of a spoon. This should take about 8-10 minutes.

4.Remove the saucepan from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

5.Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

6.Transfer the churned ice cream to a lidded container and freeze for at least 4 hours or until firm.
