Preparation

1.Heat olive oil in a large skillet or paella pan over medium heat.

2.Add the lamb cubes and cook until browned on all sides. Remove the lamb from the pan and set aside.

3.In the same pan, add the chopped onion and minced garlic. Sauté until the onion becomes translucent.

4.Add the diced bell peppers and tomatoes to the pan. Cook for 5 minutes, until the vegetables soften.

5.Stir in the rice, paprika, cumin, salt, and black pepper. Cook for 2 minutes, stirring constantly.

6.Return the lamb to the pan and pour in the lamb or vegetable broth. Bring to a boil, then reduce the heat to low.

7.Cover the pan and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.

8.Remove from heat and let it rest for 5 minutes. Fluff the rice with a fork.

9.Garnish with fresh parsley before serving.
