Preparation

1.In a large mixing bowl, combine the flour, cold butter, saffron water, sugar, and salt. Rub the butter into the flour mixture using your fingertips until it resembles breadcrumbs.

2.Add the beaten egg and mix until the dough comes together. Shape the dough into a ball, cover with plastic wrap, and refrigerate for 30 minutes.

3.Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

4.In a separate bowl, mix together the ground almonds, sugar, and rose water until well combined.

5.Roll out the chilled dough on a lightly floured surface to a thickness of about 3mm (1/8 inch). Using a round cookie cutter, cut out circles of dough and place them on the prepared baking sheet.

6.Spoon a small amount of the almond filling onto each dough circle, leaving a border around the edges. Fold the edges of the dough over the filling, creating a half-moon shape.

7.Brush the tops of the pastries with beaten egg yolk and place half a glacé cherry on each.
