Preparation

1.In a bowl, combine the minced garlic, grated ginger, chopped lemongrass, soy sauce, sweet soy sauce, vegetable oil, ground coriander, ground cumin, turmeric powder, salt, and black pepper. Mix well to create a marinade.

2.Place the pork ribs in a large ziplock bag or a shallow dish. Pour the marinade over the ribs, ensuring they are evenly coated. Marinate in the refrigerator for at least 2 hours, or overnight for best results.

3.Preheat the grill to medium-high heat.

4.Remove the ribs from the marinade and shake off any excess. Grill the ribs for about 15-20 minutes per side, or until they are cooked through and slightly charred. Baste with the remaining marinade during grilling for extra flavor.

5.While the ribs are grilling, prepare the spicy peanut sauce. In a blender or food processor, combine the roasted peanuts, red chili peppers, garlic, tamarind paste, sweet soy sauce, palm sugar, salt, and water. Blend until smooth and creamy.
