1.In a bowl, soak the dried mushrooms in warm water for 30 minutes until they become soft. Drain and rinse them thoroughly.

2.In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.

3.Add the rehydrated mushrooms to the pot and cook for a few minutes, stirring occasionally.

4.Pour in the vegetable broth and add the dried thyme, dried parsley, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.

5.Remove the bay leaf from the pot. Using an immersion blender or a regular blender, puree the soup until smooth and creamy.
