Preparation

1.Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until translucent.

2.Add the cubed pork or beef to the pot and brown on all sides.

3.Stir in the sliced bell peppers, diced tomatoes, beef or vegetable broth, green olives, capers, lemon zest, lemon juice, paprika, saffron threads, and dried oregano.

4.Season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat to low.

5.Cover the pot and simmer for 1.5 to 2 hours, or until the meat is tender and the flavors have melded together.

6.Serve the Balearic-style Kluten hot with crusty bread or rice.
