1.In a large mixing bowl, combine the flour, vegan butter, coconut sugar, and salt. Use your fingertips to rub the butter into the flour until the mixture resembles breadcrumbs.

2.In a separate bowl, whisk together the almond milk and vanilla extract. Gradually pour the liquid mixture into the flour mixture, stirring until a dough forms.

3.Transfer the dough onto a lightly floured surface and knead it gently for a few minutes until smooth. Shape the dough into a ball, cover it with plastic wrap, and refrigerate for 30 minutes.

4.Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

5.In a small bowl, combine the chopped nuts, dried fruits, maple syrup, and ground cinnamon. Mix well to ensure the filling is evenly coated.
