Treat your ingredients with care...

  • Lamb — For tender and flavorful lamb, marinate it for at least 30 minutes to allow the spices to penetrate the meat.
  • Chettinad masala — Adjust the amount of Chettinad masala according to your spice preference. Increase or decrease the quantity to suit your taste.
  • Noodles — Cook the noodles until they are al dente, as they will continue to cook when stir-fried with the other ingredients.

Tips & Tricks

  • If you prefer a spicier dish, add a pinch of red chili powder or chopped green chilies.
  • Customize the vegetable selection by adding mushrooms, carrots, or snow peas for added texture and flavor.
  • For a tangy twist, squeeze some lemon juice over the noodles before serving.
  • If you can't find Chettinad masala, you can make your own by grinding together spices like fennel seeds, coriander seeds, cumin seeds, and dried red chilies.
  • Leftovers can be refrigerated and enjoyed the next day. Reheat in a pan or microwave, adding a splash of water to prevent the noodles from drying out.
