In this Chettinad adaptation of Liaoning Lamb Noodles, we incorporate the distinct flavors of Chettinad cuisine. The original Chinese dish is transformed by marinating the lamb in a blend of Chettinad spices, such as black peppercorns, cloves, cinnamon, and star anise. Additionally, we use Chettinad masala to season the noodles, infusing them with the unique taste of Chettinad cuisine. Preparation

1.Marinate the lamb slices with Chettinad masala, crushed black peppercorns, ground cloves, ground cinnamon, ground star anise, minced garlic, grated ginger, and salt. Let it marinate for at least 30 minutes.

2.Cook the noodles according to the package instructions. Drain and set aside.

3.Heat vegetable oil in a large pan or wok over medium-high heat.

4.Add the marinated lamb slices and stir-fry until they are cooked through and slightly browned. Remove the lamb from the pan and set aside.

5.In the same pan, add the sliced onion and bell pepper. Stir-fry until they are tender-crisp.

6.Add the cooked noodles to the pan and sprinkle Chettinad masala over them. Toss well to coat the noodles evenly with the masala.

7.Return the cooked lamb to the pan and stir-fry for another 2-3 minutes, allowing the flavors to meld together.

8.Remove from heat and garnish with fresh cilantro.

9.Serve the Chettinad Spiced Lamb Noodles hot, with lime wedges on the side.
