Preparation

1.In a large bowl, combine the flour, instant yeast, sugar, and salt. Gradually add the warm water and olive oil, mixing until a soft dough forms.

2.Knead the dough on a lightly floured surface for about 5 minutes, until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.

3.Preheat the oven to 220°C (425°F). Punch down the dough and divide it into small portions. Roll each portion into a thin circle.

4.Place the rolled dough on a baking sheet lined with parchment paper. Spread a generous amount of truffle-infused labneh on each circle of dough.

5.Top the labneh with roasted heirloom tomatoes, microgreens, sesame seeds, salt, and pepper.

6.Bake in the preheated oven for 12-15 minutes, or until the flatbread is golden brown and crispy.
