Ingredients
In this Pennsylvania Dutch adaptation, we incorporate elements of the Dutch cuisine to create a unique twist on the traditional Mapo Doufu. The original Sichuan peppercorns are replaced with black pepper, which adds a warm and earthy flavor. Additionally, we use ground pork instead of the traditional minced beef or pork, as it aligns with the Pennsylvania Dutch preference for heartier meat dishes. Preparation

1.Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant and the onion is translucent.

2.Add the ground pork to the skillet and cook until browned, breaking it up into small pieces with a spoon.

3.Stir in the tomato paste, soy sauce, Worcestershire sauce, maple syrup, black pepper, and chili flakes. Cook for 2 minutes to allow the flavors to meld together.

4.Pour in the chicken broth and bring the mixture to a simmer. Add the tofu cubes and gently stir to coat them with the sauce. Simmer for 10-15 minutes, or until the tofu is heated through and the flavors have melded together.

5.Serve the Pennsylvania Dutch Style Spicy Tofu with Ground Pork over steamed rice. Garnish with sliced green onions.
