1.Preheat the oven to 180°C (350°F).

2.Sprinkle salt over the eggplant slices and let them sit for 15 minutes to remove excess moisture. Rinse and pat dry.

3.Heat the vegetable oil in a large skillet over medium heat. Add the onion and garlic, and sauté until fragrant.

4.Add the ground meat to the skillet and cook until browned. Stir in the turmeric, coriander, cumin, chili powder, salt, and pepper.

5.Pour in the coconut milk and simmer for 5 minutes, allowing the flavors to meld together.

6.In a greased baking dish, arrange a layer of eggplant slices, followed by a layer of the spiced meat mixture. Repeat the layers until all the ingredients are used, finishing with a layer of eggplant on top.

7.Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the eggplant is tender and the top is golden brown.
