Preparation

1.In a bowl, combine the goat meat, soy sauce, calamansi juice, and minced garlic. Marinate for at least 30 minutes.

2.Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the marinated goat meat and cook until browned and cooked through. Remove the meat from the pan and set aside.

3.In the same pan, add another tablespoon of vegetable oil. Sauté the diced onion, bell pepper, and carrot until they are tender.

4.Push the vegetables to one side of the pan and add the chilled cooked rice to the other side. Break up any clumps of rice with a spatula and stir-fry for a few minutes until heated through.

5.Sprinkle the annatto powder over the rice and vegetables, and stir to evenly distribute the color.

6.Return the cooked goat meat to the pan and mix well with the rice and vegetables.

7.Drizzle the fish sauce over the mixture and stir-fry for another minute to incorporate the flavors.
