Preparation

  1. 1.
Rinse the jasmine rice under cold water until the water runs clear. Drain well.
  2. 2.
In a large saucepan, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and golden.
  3. 3.
Add the diced carrot, red bell pepper, and peas to the saucepan. Cook for 5 minutes, or until the vegetables are slightly tender.
  4. 4.
In a separate pot, bring the vegetable broth to a boil. Stir in the ground turmeric until well combined.
  5. 5.
Add the rinsed jasmine rice to the saucepan with the sautéed vegetables. Stir well to coat the rice with the vegetable mixture.
  6. 6.
Pour the turmeric-infused vegetable broth into the saucepan. Season with soy sauce, fish sauce (if using), and salt to taste. Stir gently to combine.
  7. 7.
Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan and simmer for 15-20 minutes, or until the rice is cooked and fluffy.
  8. 8.
Once the rice is cooked, fluff it with a fork and let it sit, covered, for 5 minutes to allow the flavors to meld.
  9. 9.
Serve the Dorset-inspired Golden Rice garnished with fresh cilantro.

Treat your ingredients with care...

  • Turmeric — To enhance the flavor and health benefits of turmeric, consider adding a pinch of black pepper to the dish. Black pepper helps to activate the curcumin in turmeric, making it more bioavailable to the body.
  • Jasmine rice — Rinse the jasmine rice thoroughly before cooking to remove excess starch and achieve a fluffy texture.

Tips & Tricks

  • For a burst of freshness, squeeze some lime juice over the Golden Rice before serving.
  • Customize the dish by adding your favorite vegetables, such as broccoli or mushrooms.

  • If you prefer a spicier kick, add a dash of chili flakes or a finely chopped chili pepper to the vegetable mixture.
