Ingredients
In this adaptation, we infuse the traditional Turkish Nohut dürümü with the distinct flavors of Abruzzese and Molisan cuisine. The original dish is typically seasoned with Turkish spices and served with yogurt-based sauces. However, in this version, we incorporate the aromatic herbs and spices commonly found in Abruzzese and Molisan cooking, such as rosemary, oregano, and chili flakes. Preparation

1.Drain and rinse the soaked chickpeas. In a large pot, cover the chickpeas with water and bring to a boil. Reduce heat and simmer for 1 hour or until the chickpeas are tender. Drain and set aside.

2.In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.

3.Add the cooked chickpeas to the skillet and stir in the dried rosemary, dried oregano, and chili flakes. Season with salt and pepper to taste. Cook for an additional 5 minutes, allowing the flavors to meld together.

4.To prepare the Abruzzese sauce, whisk together mayonnaise, lemon juice, chopped basil, chopped parsley, salt, and pepper in a small bowl.

5.Warm the tortilla wraps in a dry skillet or microwave for a few seconds to make them pliable.

6.Spread a generous amount of Abruzzese sauce onto each tortilla wrap. Top with a portion of the chickpea filling, cherry tomatoes, cucumber slices, and fresh parsley.

7.Roll up the wraps tightly, tucking in the sides as you go. Cut each wrap in half diagonally and serve.
