Preparation

    In a large pot, heat the olive oil over medium heat. Add the sliced onion and minced garlic, and sauté until fragrant and translucent.

    Stir in the ground cumin, dried oregano, dried thyme, and dried rosemary. Cook for an additional minute to release the flavors.

    Pour in the vegetable broth and water. Bring the mixture to a boil.

    Add the diced tomatoes, sliced carrots, sliced zucchini, sliced bell peppers, sliced mushrooms, and cooked chickpeas to the pot. Reduce the heat to low and simmer for 15-20 minutes, or until the vegetables are tender.

    Stir in the cooked whole wheat orzo pasta and season with salt and pepper to taste. Cook for an additional 5 minutes to allow the flavors to meld together.
