Preparation

1.Heat the vegetable oil in a large pot over medium heat. Add the onions and garlic, and sauté until fragrant and golden brown.

2.Add the beef slices to the pot and cook until browned on all sides.

3.Pour in the beef broth and bring to a boil. Skim off any impurities that rise to the surface.

4.Add the carrots, celery, bay leaves, dill, cinnamon stick, star anise, and black peppercorns to the pot. Reduce the heat to low and let simmer for 1-2 hours, until the beef is tender.

5.While the broth is simmering, cook the rice noodles according to the package instructions. Drain and set aside.

6.Once the beef is tender, remove it from the pot and shred it into smaller pieces using two forks.

7.Return the shredded beef to the pot and add the fish sauce and soy sauce. Season with salt to taste.
