Preparation

1.In a mixing bowl, combine the all-purpose flour, salt, turmeric powder, red chili powder, cumin powder, and coriander powder. Mix well.

2.Gradually add water and knead the dough until it becomes smooth and pliable. Cover the dough and let it rest for 30 minutes.

3.In a pan, heat vegetable oil over medium heat. Add mustard seeds and cumin seeds. Once they start to splutter, add the chopped onions and sauté until golden brown.

4.Add ginger paste and garlic paste to the pan and cook for a minute.

5.Add the mashed potatoes, boiled peas, and salt. Mix well and cook for 2-3 minutes. Remove from heat and let the filling cool.

6.Divide the dough into small balls and roll each ball into a thin circle.

7.Place a spoonful of the potato filling in the center of each circle and fold the edges to seal the filling.

8.Heat oil in a deep pan for frying. Carefully place the stuffed pitarakia in the hot oil and fry until golden brown on both sides.

9.Remove from the oil and drain on a paper towel to remove excess oil.
