Ingredients
In the original Spanish revuelto de ajetes, the dish primarily focuses on the flavors of green garlic and eggs. However, in this Parsi adaptation, we incorporate the aromatic spices and tangy flavors typical of Parsi cuisine. - Green garlic (ajetes) — Trim off the root ends and any tough outer layers before using. Use both the white and green parts of the garlic for maximum flavor.
- Tamarind pulp — Soak the tamarind pulp in warm water for a few minutes to soften it. Then, extract the pulp by squeezing it with your fingers and discard the fibrous parts.
