Preparation

1.In a large mixing bowl, combine the flour, sugar, cardamom, cinnamon, ginger, cloves, nutmeg, and salt.

3.In another small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until frothy.

4.Add the saffron-infused milk, melted butter, and yeast mixture to the dry ingredients. Mix until a dough forms.

5.Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic.

6.Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.

7.Punch down the dough and knead in the raisins.

8.Divide the dough into 12 equal pieces and shape each piece into a bun.

9.Place the buns on a baking sheet lined with parchment paper, cover with a kitchen towel, and let them rise for another 30 minutes.
