Preparation

1.In a bowl, combine the orange juice, lime juice, minced garlic, chopped cilantro, chopped oregano, olive oil, salt, and pepper. Mix well.

2.Add the chicken strips to the marinade and toss to coat. Cover the bowl and refrigerate for at least 1 hour, allowing the flavors to meld together.

3.In the meantime, prepare the peanut sauce by combining the peanut butter, coconut milk, lime juice, soy sauce, honey, grated ginger, minced garlic, and red pepper flakes (if using) in a small saucepan. Heat over low heat, stirring constantly, until the sauce is smooth and well combined. Remove from heat and set aside.
