Ingredients

Preparation

1.Rinse the red rice thoroughly and soak it in water for 30 minutes.

2.In a separate bowl, soak the adzuki beans in water overnight.

3.Drain the soaked red rice and adzuki beans.

4.In a large pot, heat olive oil over medium heat.

5.Add the chopped onion and minced garlic to the pot and sauté until golden brown.

6.Add the soaked red rice and adzuki beans to the pot and stir well.

7.Pour in the vegetable broth and bring to a boil.

8.Reduce the heat to low, cover the pot, and simmer for 30-40 minutes, or until the rice and beans are tender.

9.Stir in the cumin powder, paprika, dried thyme, dried oregano, salt, and pepper. Adjust the seasoning according to taste.

10.Cook for an additional 5 minutes to allow the flavors to meld together.

11.Remove from heat and let it rest for a few minutes.
