While the original American version uses molasses as the main sweetener, this Udupi recipe replaces it with jaggery, a traditional Indian sweetener made from sugarcane or palm sap. Preparation

    Preheat the oven to 180°C (350°F).

    In a mixing bowl, combine the all-purpose flour, grated jaggery, cardamom powder, cinnamon powder, ginger powder, nutmeg powder, baking soda, and a pinch of salt.
