Preparation

1.Rinse the split green lentils thoroughly and soak them in water for 30 minutes.

2.In a large pot, bring 4 cups of water to a boil. Add the soaked lentils and cook until they are tender, approximately 20-25 minutes.

3.In a separate pan, heat a tablespoon of oil over medium heat. Add the cumin seeds and let them splutter.

4.Add the ginger paste and green chili paste to the pan and sauté for a minute.

5.Add the diced potatoes (if using), bell peppers, tomatoes, zucchini, and green beans to the pan. Cook for 5 minutes, stirring occasionally.

6.Add the cooked lentils along with the water to the pan. Stir in the turmeric powder, coriander powder, garam masala, and salt. Simmer for 10-15 minutes, allowing the flavors to meld together.

7.Adjust the consistency of the stew by adding more water if desired.

8.Serve the Jain Vegetarian Snert hot, garnished with fresh cilantro leaves.
