Preparation

  1. 1.
In a large pan, heat a tablespoon of vegetable oil over medium heat. Add the chopped onion and sliced bell pepper. Sauté until the vegetables are softened.
  2. 2.
Add the sliced Hungarian sausages to the pan and cook until lightly browned.
  3. 3.
Sprinkle the paprika, salt, and black pepper over the sausage mixture. Stir well to combine.
  4. 4.
Remove the pan from heat and let the mixture cool slightly.
  5. 5.
In a mixing bowl, combine the mashed potato and sour cream. Mix until well combined.
  6. 6.
Add the sausage mixture to the potato mixture and stir until evenly distributed.
  7. 7.
Take one spring roll wrapper and place it on a clean surface. Spoon about 2 tablespoons of the filling onto the wrapper, spreading it in a line across the center.
  8. 8.
Fold the sides of the wrapper over the filling, then roll it up tightly, sealing the edges with a bit of water.
  9. 9.
Repeat the process with the remaining wrappers and filling.
  10. 10.
In a deep pan or wok, heat vegetable oil for frying. Once the oil is hot, carefully add the spring rolls and fry until golden brown and crispy.
  11. 11.
Remove the spring rolls from the oil and drain on a paper towel to remove excess oil.
  12. 12.
Serve the Hungarian-style spring rolls hot with your favorite dipping sauce.

Treat your ingredients with care...

  • Hungarian sausages — Use high-quality sausages with a good balance of spices for the best flavor.
  • Hungarian paprika — Opt for sweet or mild paprika for a subtle heat, or use hot paprika if you prefer a spicier kick.
  • Spring roll wrappers — Keep the wrappers covered with a damp cloth while assembling the spring rolls to prevent them from drying out.

Tips & Tricks

  • To make the spring rolls extra crispy, double fry them. After the initial frying, let them cool for a few minutes, then fry them again until golden brown.
  • Serve the spring rolls immediately after frying to maintain their crispiness.
  • Experiment with different dipping sauces such as Hungarian tomato sauce or garlic yogurt sauce for added flavor.
