Ingredients

While the concept of spring rolls remains the same, the key difference lies in the spices and flavors used. Instead of the traditional Chinese seasonings, this Moroccan adaptation incorporates a blend of spices like cumin, coriander, cinnamon, and paprika, giving the spring rolls a unique and exotic twist. Preparation

  1. 1.
Heat olive oil in a pan over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.
  2. 2.
Add the ground cumin, ground coriander, ground cinnamon, paprika, salt, and black pepper to the pan. Stir well to combine the spices with the onion and garlic mixture.
  3. 3.
Add the shredded chicken to the pan and cook for 2-3 minutes, until heated through.
  4. 4.
Remove the pan from heat and transfer the mixture to a large bowl. Allow it to cool slightly.
  5. 5.
Once cooled, add the cooked couscous, chopped cilantro, chopped mint, and chopped roasted almonds to the bowl. Mix well to combine all the ingredients.
  6. 6.
Take a spring roll wrapper and place it on a clean surface. Spoon about 2 tablespoons of the filling onto the wrapper, slightly below the center.
  7. 7.
Fold the bottom edge of the wrapper over the filling, then fold in the sides. Roll the wrapper tightly, sealing the edges with beaten egg.
  8. 8.
Repeat the process with the remaining spring roll wrappers and filling.
  9. 9.
Heat vegetable oil in a deep pan or wok over medium-high heat. Fry the spring rolls in batches until golden brown and crispy, about 3-4 minutes per batch.
  10. 10.
Remove the spring rolls from the oil and drain on a paper towel-lined plate to remove excess oil.
  11. 11.
Serve the Moroccan-inspired Spring Rolls hot and crispy, with your favorite dipping sauce.

Treat your ingredients with care...

  • Couscous — Fluff the cooked couscous with a fork before adding it to the filling to ensure a light and fluffy texture.
  • Fresh herbs — Use fresh herbs for the best flavor. If you can't find fresh cilantro or mint, you can substitute with dried herbs, but reduce the quantity by half.
  • Roasted almonds — Toast the almonds in a dry pan over medium heat for a few minutes until fragrant before chopping them. This will enhance their nutty flavor.

Tips & Tricks

  • To prevent the spring roll wrappers from drying out, cover them with a damp cloth while assembling the rolls.
  • Make sure the oil is hot enough before frying the spring rolls to ensure they become crispy and golden brown.
  • Serve the spring rolls immediately after frying for the best texture and flavor.
  • Experiment with different dipping sauces like harissa yogurt, spicy tomato chutney, or sweet chili sauce to complement the Moroccan flavors.
  • If you prefer a vegetarian version, you can substitute the chicken with cooked chickpeas or tofu.
