Preparation

1.Heat olive oil in a pan over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.

2.Add the ground cumin, ground coriander, ground cinnamon, paprika, salt, and black pepper to the pan. Stir well to combine the spices with the onion and garlic mixture.

3.Add the shredded chicken to the pan and cook for 2-3 minutes, until heated through.

4.Remove the pan from heat and transfer the mixture to a large bowl. Allow it to cool slightly.

5.Once cooled, add the cooked couscous, chopped cilantro, chopped mint, and chopped roasted almonds to the bowl. Mix well to combine all the ingredients.

6.Take a spring roll wrapper and place it on a clean surface. Spoon about 2 tablespoons of the filling onto the wrapper, slightly below the center.

7.Fold the bottom edge of the wrapper over the filling, then fold in the sides. Roll the wrapper tightly, sealing the edges with beaten egg.
