Preparation

1.Rinse the sushi rice in cold water until the water runs clear.

2.In a medium saucepan, combine the rice and water. Bring to a boil, then reduce the heat to low and cover. Cook for 18-20 minutes, or until the water is absorbed and the rice is tender.

3.In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar dissolves.

4.Transfer the cooked rice to a large bowl. Add the vinegar mixture and stir to combine.

5.Lay a sheet of nori on a sushi mat or piece of plastic wrap. Spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
