Preparation

1.Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions.

2.In a small bowl, mix together rice vinegar, sugar, and salt. Heat the mixture in the microwave for 30 seconds to dissolve the sugar.

3.Transfer the cooked rice to a large bowl and pour the vinegar mixture over it. Gently fold the rice with a wooden spoon to evenly distribute the vinegar. Let the rice cool to room temperature.

4.Place a bamboo sushi mat on a clean surface and put a sheet of nori on top.

5.Wet your hands with water to prevent sticking and spread a thin layer of saffron-infused rice over the nori, leaving a 1-inch border at the top.

6.Arrange the shrimp, chorizo, roasted red pepper, and avocado slices in a line across the center of the rice.

7.Using the bamboo mat, tightly roll the sushi, applying gentle pressure to ensure a compact roll.
