The original Mexican adobada marinade is replaced with a blend of Georgian spices such as coriander, fenugreek, and paprika, which infuse the pork with a distinct smoky flavor. Additionally, the traditional Mexican salsa is substituted with a tangy tomato-cucumber salsa, adding a refreshing element to the dish. 1.In a bowl, combine the olive oil, red wine vinegar, minced garlic, ground coriander, ground fenugreek, paprika, salt, and black pepper. Mix well to create a marinade.

2.Add the thinly sliced pork shoulder to the marinade and toss until the meat is evenly coated. Allow it to marinate for at least 1 hour, or overnight for maximum flavor.
