This version incorporates the essence of Castilian-Leonese cuisine by using ingredients commonly found in the region, such as cinnamon and a buttery crust. The result is a dessert that pays homage to the original while offering a unique twist that reflects the culinary heritage of Castilian-Leonese cuisine. Preparation

1.Preheat the oven to 180°C (350°F).

2.In a large mixing bowl, combine the flour, cold butter cubes, sugar, and salt. Use your fingertips or a pastry cutter to rub the butter into the dry ingredients until the mixture resembles coarse crumbs.

3.Add the egg to the mixture and knead until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

4.In a separate bowl, whisk together the ground almonds, milk, sugar, eggs, cinnamon, lemon zest, and orange zest until well combined.

5.Roll out the chilled dough on a lightly floured surface and transfer it to a 9-inch tart pan. Press the dough into the bottom and sides of the pan, trimming any excess.

6.Pour the almond custard filling into the prepared crust.

7.Bake the tart in the preheated oven for 35-40 minutes, or until the custard is set and the crust is golden brown.

8.Remove the tart from the oven and let it cool completely.

9.Once cooled, dust the tart with powdered sugar and serve with a dollop of freshly whipped cream.
