Preparation

1.Peel the plantains and cut them into 1-inch thick slices.

2.In a large skillet, heat vegetable oil over medium-high heat.

3.Fry the plantain slices in batches until golden brown, about 2-3 minutes per side.

4.Remove the fried plantains from the skillet and place them on a paper towel-lined plate to drain excess oil.

5.Using a tostonera or the bottom of a glass, flatten each plantain slice to about 1/4 inch thickness.

6.In a small bowl, mix together sea salt, paprika, cayenne pepper, and garlic powder.

7.Sprinkle the spice mixture over the flattened plantains.

8.Return the flattened plantains to the skillet and fry for an additional 1-2 minutes on each side until crispy.

9.Remove from the skillet and drain on a paper towel.

10.Serve the Basque-style Tostones hot and enjoy!
