Ingredients
In this Gibraltarian adaptation, we incorporate local ingredients and flavors to give the Tropisk aroma-kake a unique twist. We enhance the tropical essence by adding fresh lemon zest and juice, as well as a hint of almond extract. Additionally, we replace some of the traditional ingredients with local alternatives, such as using coconut milk instead of regular milk and incorporating local citrus fruits for a burst of Mediterranean flavor. Preparation

1.Preheat the oven to 180°C (350°F). Grease and flour a 9-inch round cake pan.

2.In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

3.In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

4.Beat in the eggs, one at a time, followed by the vanilla extract, almond extract, lemon zest, and lemon juice.

5.Gradually add the dry ingredients to the wet ingredients, alternating with the coconut milk. Mix until just combined.

6.Stir in the vegetable oil until the batter is smooth and well incorporated.

7.Pour the batter into the prepared cake pan and smooth the top with a spatula.

8.Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

9.Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
