1.In a large pot, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until translucent.

2.Add the bell peppers and tomatoes to the pot, and cook for 5 minutes, until the vegetables soften.

3.Stir in the cumin, paprika, dried oregano, and chili powder, and cook for another minute to toast the spices.

4.Add the tomato paste and vegetable broth to the pot, and bring to a simmer.

5.Add the potatoes and simmer for 10 minutes, until they are partially cooked.

6.Gently add the shrimp to the pot and cook for an additional 5 minutes, until they turn pink and opaque.
