In this Baden-style adaptation, we incorporate the flavors and ingredients commonly found in Baden cuisine. The traditional Spanish alfajor is transformed by using a rich almond shortbread cookie instead of the usual wheat-based cookie. The cherry jam filling pays homage to the famous Black Forest cake, a beloved dessert from the Baden region. The addition of whipped cream adds a creamy element, reminiscent of the popular Schwarzwälder Kirschtorte (Black Forest cake). Finally, the Alfajor de Medina Sidonia is coated in a dark chocolate ganache, which adds a touch of sophistication and richness to the dessert. Preparation

1.In a mixing bowl, combine the ground almonds, granulated sugar, all-purpose flour, softened butter, and almond extract. Mix until a dough forms.

2.Divide the dough into two equal portions and shape each portion into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.

3.Preheat the oven to 180°C (350°F). Line a baking sheet with parchment paper.

4.Roll out one portion of the dough on a lightly floured surface to a thickness of about ½ cm (¼ inch). Use a round cookie cutter to cut out cookies and transfer them to the prepared baking sheet. Repeat with the remaining dough.

5.Bake the cookies for 12-15 minutes, or until golden brown. Allow them to cool completely on a wire rack.

6.Once the cookies have cooled, spread a teaspoon of cherry jam onto the bottom side of one cookie. Top with a dollop of whipped cream and sandwich with another cookie. Repeat with the remaining cookies.

7.In a heatproof bowl, melt the dark chocolate and vegetable oil together over a double boiler or in the microwave, stirring until smooth.

8.Dip each sandwiched cookie halfway into the melted chocolate, allowing any excess to drip off. Place the coated cookies on a parchment-lined tray and refrigerate for 30 minutes, or until the chocolate has set.
