Ingredients
In this adaptation, we substitute the traditional Peruvian beef heart with suri, a local delicacy from Eswatini. The marinade is also adjusted to incorporate Eswatini's flavor preferences, using spices commonly found in Eswatini cuisine. 1.In a bowl, combine the vegetable oil, paprika, cumin, minced garlic, salt, black pepper, and cayenne pepper (if using).

2.Add the suri to the marinade and toss until well coated. Allow it to marinate for at least 1 hour, or overnight for more intense flavor.
