Preparation

  1. 1.
Rinse the rice under cold water until the water runs clear. Drain and set aside.
  2. 2.
In a large skillet or pot, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until they become translucent.
  3. 3.
Add the diced bell peppers, corn kernels, and jalapeno pepper to the skillet. Cook for 5 minutes, stirring occasionally.
  4. 4.
Stir in the ground cumin, chili powder, paprika, salt, and black pepper. Cook for an additional 2 minutes to toast the spices.
  5. 5.
Add the rice to the skillet and stir well to coat it with the vegetable mixture and spices.
  6. 6.
Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. 7.
Remove the skillet from heat and let it sit, covered, for 5 minutes to allow the rice to steam.
  8. 8.
Fluff the rice with a fork and stir in the chopped cilantro. Serve hot with lime wedges on the side.

Treat your ingredients with care...
