Preparation

1.Preheat the oven to 180°C (350°F).

2.Place the sausages on a baking sheet and bake for 20-25 minutes, or until cooked through.

3.In the meantime, boil the potatoes in a large pot of salted water until tender. Drain well.

4.In a separate small saucepan, heat the coconut milk and butter over low heat until the butter has melted.

5.Mash the potatoes with a potato masher or fork, gradually adding the coconut milk mixture until smooth and creamy. Stir in the jerk seasoning, salt, and pepper.

6.In a skillet, heat the vegetable oil over medium heat. Add the sliced onion and cook until softened and lightly caramelized, about 5 minutes. Add the minced garlic and scotch bonnet pepper (if using) and cook for an additional minute.

7.Serve the mashed potatoes alongside the baked jerk sausages, topped with the caramelized onion mixture. Garnish with fresh parsley.
