Preparation

1.In a food processor, pulse the shrimp and white fish fillets until finely chopped.

2.Transfer the seafood mixture to a large bowl and add diced pineapple, bell peppers, red onion, minced garlic, lime juice, Caribbean hot sauce, soy sauce, ground allspice, ground ginger, salt, and black pepper. Mix well to combine.

3.Place a gyoza wrapper on a clean surface and spoon about 1 tablespoon of the filling onto the center of the wrapper.

4.Moisten the edges of the wrapper with water and fold it in half, creating a half-moon shape. Pinch the edges to seal the gyoza.

5.Repeat with the remaining wrappers and filling.

6.Heat a large non-stick skillet over medium heat and add a small amount of oil.

7.Arrange the gyoza in a single layer in the skillet and cook for 2-3 minutes, or until the bottoms are golden brown.

8.Pour 1/4 cup (60ml) of water into the skillet and cover with a lid. Steam the gyoza for an additional 3-4 minutes, or until the filling is cooked through.

9.Remove the lid and cook for an additional minute to crisp up the bottoms.
