Preparation

  1. 1.
In a food processor, pulse the shrimp and white fish fillets until finely chopped.
  2. 2.
Transfer the seafood mixture to a large bowl and add diced pineapple, bell peppers, red onion, minced garlic, lime juice, Caribbean hot sauce, soy sauce, ground allspice, ground ginger, salt, and black pepper. Mix well to combine.
  3. 3.
Place a gyoza wrapper on a clean surface and spoon about 1 tablespoon of the filling onto the center of the wrapper.
  4. 4.
Moisten the edges of the wrapper with water and fold it in half, creating a half-moon shape. Pinch the edges to seal the gyoza.
  5. 5.
Repeat with the remaining wrappers and filling.
  6. 6.
Heat a large non-stick skillet over medium heat and add a small amount of oil.
  7. 7.
Arrange the gyoza in a single layer in the skillet and cook for 2-3 minutes, or until the bottoms are golden brown.
  8. 8.
Pour 1/4 cup (60ml) of water into the skillet and cover with a lid. Steam the gyoza for an additional 3-4 minutes, or until the filling is cooked through.
  9. 9.
Remove the lid and cook for an additional minute to crisp up the bottoms.
  10. 10.
Serve the Caribbean Gyoza hot with your favorite dipping sauce.

Treat your ingredients with care...

  • Shrimp — Ensure the shrimp is peeled and deveined before using in the recipe.
  • White fish fillets — Use a mild-tasting white fish such as cod or tilapia for the best results.
  • Pineapple — Use fresh pineapple for a burst of tropical flavor. Canned pineapple can be used as a substitute if fresh is not available.
  • Caribbean hot sauce — Adjust the amount of hot sauce according to your spice preference. Add more for extra heat or reduce for a milder flavor.
  • Gyoza wrappers — Look for gyoza wrappers in the refrigerated section of your local Asian grocery store. If unavailable, you can make your own wrappers using a mixture of all-purpose flour and water.

Tips & Tricks

  • To prevent the gyoza from sticking to the skillet, make sure to use a non-stick skillet or a well-seasoned cast-iron skillet.
  • Serve the Caribbean Gyoza with a dipping sauce made from a combination of soy sauce, lime juice, and a dash of Caribbean hot sauce for an extra kick.
  • If you prefer a crispy texture, you can pan-fry the gyoza for a few additional minutes after steaming.
  • Experiment with different tropical fruits such as mango or papaya for a variation in flavors.
  • Freeze any leftover uncooked gyoza on a baking sheet, then transfer them to a freezer bag. They can be cooked directly from frozen by adding a few extra minutes to the cooking time.
