Ingredients
While the Indian Biryani traditionally uses basmati rice and a variety of Indian spices, the Bosnian Biryani incorporates local Bosnian spices and long-grain rice. Preparation

1.Rinse the rice under cold water until the water runs clear. Soak the rice in cold water for 30 minutes, then drain.

2.In a large pot, heat the vegetable oil over medium heat. Add the sliced onions and cook until golden brown.

3.Add the minced garlic and cook for another minute until fragrant.

4.Add the meat pieces and cook until browned on all sides.

5.Stir in the diced carrots and red bell pepper, and cook for 5 minutes.

6.Add the ground cumin, paprika, cinnamon, allspice, cloves, nutmeg, black pepper, and chili powder (if using). Stir well to coat the meat and vegetables with the spices.

7.Add the drained rice to the pot and stir gently to combine with the meat and spices.

8.Pour in the chicken or vegetable broth and season with salt to taste. Bring to a boil, then reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.

9.Remove from heat and let the biryani rest, covered, for 10 minutes.

10.Fluff the rice with a fork and garnish with fresh parsley or cilantro before serving.
