Preparation

1.In a large non-stick pan, combine the sugar and water. Heat over medium heat until the sugar dissolves completely.

2.Add the grated coconut to the pan and mix well with the sugar syrup.

3.Stir in the condensed milk, cardamom, vanilla extract, and a pinch of salt. Cook over low heat, stirring continuously, until the mixture thickens and starts to come away from the sides of the pan.

4.Remove the pan from heat and let the mixture cool slightly.

5.Grease a square baking dish with a little oil or butter. Pour the fudge mixture into the dish and spread it evenly.

6.Allow the fudge to cool completely at room temperature. Once cooled, cut it into small squares or diamond shapes.
