1.In a large pot, bring water to a boil and add the beef tendons. Simmer for 2-3 hours until the tendons are tender.

2.Remove the beef tendons from the pot and let them cool. Once cooled, thinly slice the tendons.

3.In a mixing bowl, combine the sliced beef tendons, cucumber, radishes, and red onion.

4.In a separate small bowl, whisk together the Dutch mustard, apple cider vinegar, honey, salt, and pepper to make the dressing.
