Preparation

1.In a large pot, heat the olive oil over medium heat. Add the sliced Maltese sausage and cook until browned. Remove the sausage from the pot and set aside.

2.In the same pot, add the sliced onions and minced garlic. Sauté until the onions are caramelized and golden brown.

3.Add the chopped kale to the pot and cook for a few minutes until wilted.

4.Stir in the diced tomatoes, dried thyme, and bay leaves. Pour in the vegetable broth and bring to a simmer.

5.Return the cooked sausage to the pot and season with salt and pepper to taste.

6.Cover the pot and let the stew simmer for about 30-40 minutes, or until the kale is tender and the flavors have melded together.

7.Remove the bay leaves before serving. Adjust the seasoning if needed.
