Preparation

1.In a large bowl, combine the all-purpose flour and warm water. Knead until a smooth dough forms. Cover and let it rest for 30 minutes.

2.In a separate bowl, mix together the shiitake mushrooms, cabbage, carrots, tofu, soy sauce, sesame oil, cornstarch, ginger, garlic, salt, white pepper, and sugar. Set aside.

3.Divide the dough into small portions and roll each portion into a thin circle.

4.Place a spoonful of the vegetable filling in the center of each dough circle. Fold the edges of the dough over the filling and pinch to seal.

5.Heat vegetable oil in a pan over medium heat. Fry the dumplings until golden brown and crispy on both sides.
