Preparation

1.Preheat oven to 200C (400F).

2.In a bowl, combine cornstarch, salt, and pepper. Dredge chicken pieces in the mixture.

3.In a separate bowl, whisk together soy sauce, Dijon mustard, honey, rice vinegar, garlic, Herbes de Provence, and red pepper flakes.

4.Heat vegetable oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides, about 5 minutes.

5.Pour the soy sauce mixture over the chicken and stir to coat. Add sliced bell peppers and onion to the skillet and cook for 2-3 minutes.

6.Transfer the skillet to the oven and bake for 10-15 minutes, until the chicken is cooked through and the sauce has thickened.

7.While the chicken is baking, prepare the ratatouille. In a large baking dish, toss together diced tomatoes, sliced zucchini, sliced eggplant, olive oil, salt, and pepper. Bake for 20-25 minutes, until the vegetables are tender.

8.Serve the General Tso's Chicken with the ratatouille on the side.
