1.Heat the vegetable oil in a pan over medium heat. Add the chopped onion and sauté until golden brown.

2.Add the minced garlic and grated ginger to the pan. Cook for another minute until fragrant.

3.Stir in the tomato puree and cook for 2-3 minutes until the raw smell disappears.

4.Add the lemongrass stalk, bird's eye chilies, turmeric powder, cumin powder, coriander powder, and paprika. Mix well to combine the spices with the tomato mixture.

5.Add the cubed paneer to the pan and gently toss to coat the paneer with the spice mixture.

6.Pour in the coconut milk and season with salt. Stir well and bring the mixture to a simmer.

7.Reduce the heat to low and let the paneer simmer in the gravy for 10-15 minutes, allowing the flavors to meld together.

8.Remove the lemongrass stalk before serving. Garnish with fresh cilantro leaves.
