In this Cameroonian adaptation, we incorporate Cameroonian spices and flavors to give the dish a unique twist. The original Turkish recipe is typically vegetarian, but we add ground meat to make it heartier and more suitable for Cameroonian cuisine. Preparation

1.Preheat the oven to 180°C (350°F).

2.Cut the zucchinis in half lengthwise and scoop out the seeds to create boats.

3.In a large bowl, mix together the ground meat, onion, garlic, red bell pepper, tomato, tomato paste, paprika, cayenne pepper, ground ginger, ground coriander, salt, and pepper.

4.Stuff the zucchini boats with the meat mixture.

5.Heat the vegetable oil in a large skillet over medium heat. Place the stuffed zucchinis in the skillet and cook for 5 minutes on each side, until lightly browned.

6.Transfer the zucchinis to a baking dish and pour the tomato sauce over them.

7.Cover the baking dish with foil and bake for 30 minutes.

8.Remove the foil and bake for an additional 10 minutes, until the zucchinis are tender and the sauce has thickened.
