The original Finnish dish typically uses rye dough and includes ingredients like pork and bacon. However, in this Hawaiian-style version, we substitute the rye dough with a lighter, flakier crust and replace the pork with fish. Additionally, we infuse the dish with the flavors of pineapple, coconut, and macadamia nuts, giving it a distinct Hawaiian twist. Preparation

1.In a large mixing bowl, combine the flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

2.Gradually add the ice water, a tablespoon at a time, and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.

3.Preheat the oven to 180°C (350°F).

4.In a separate bowl, combine the fish fillets, diced pineapple, shredded coconut, chopped macadamia nuts, cilantro, ginger, garlic, soy sauce, lime juice, salt, and pepper. Mix well to ensure all the ingredients are evenly distributed.

5.On a lightly floured surface, roll out the chilled dough into a large circle, about 1/4 inch thick.

6.Place the fish and fruit mixture in the center of the dough circle, leaving a border around the edges.

7.Fold the edges of the dough over the filling, pinching them together to seal the kalakukko.
