Preparation

1.Cook the jasmine rice according to package instructions and set aside to cool.

2.Heat the vegetable oil in a large skillet or wok over medium heat.

3.Add the diced onion and minced garlic to the skillet and sauté until fragrant and translucent.

4.Add the diced bell peppers and pineapple chunks to the skillet and cook for 2-3 minutes until slightly softened.

5.Push the vegetables to one side of the skillet and add the cooked shrimp to the other side. Cook for 1-2 minutes until heated through.

6.In a small bowl, whisk together the soy sauce, fish sauce, curry powder, turmeric powder, paprika, and chili flakes (if using).

7.Add the cooked rice to the skillet and pour the sauce mixture over it. Stir well to combine and coat the rice evenly with the sauce.

8.Cook for an additional 3-4 minutes, stirring occasionally, until the rice is heated through and the flavors are well incorporated.

9.Remove from heat and garnish with sliced green onions and chopped cilantro.
