In this adaptation of the Norwegian lutefisk, we have transformed the dish into a Chinese aristocrat-style steamed fish. The original dish, lutefisk, is made by soaking dried fish in lye, resulting in a gelatinous texture. However, in Chinese aristocrat cuisine, we focus on steaming the fish to preserve its delicate flavors and textures. The Chinese version incorporates traditional Chinese ingredients and cooking techniques, such as ginger, scallions, and soy sauce, to create a dish that is distinctly Chinese in taste and presentation. Preparation

1.Place the fish on a heatproof plate and make a few diagonal cuts on both sides.

2.Scatter the ginger slices and half of the scallion strips over the fish.

3.In a small bowl, mix together the soy sauce, Shaoxing wine, sesame oil, and sugar until the sugar dissolves.

4.Pour the sauce over the fish, ensuring it coats the entire surface.

5.Prepare a steamer and bring the water to a boil.

6.Carefully place the plate with the fish into the steamer and cover with a lid.

7.Steam the fish for about 10-12 minutes, or until the flesh is opaque and flakes easily with a fork.

8.Remove the plate from the steamer and garnish with the remaining scallion strips and fresh cilantro leaves.
