Treat your ingredients with care...

  • Salmon — Ensure that the salmon fillet is fresh and of high quality to achieve the best flavor and texture in the mousse.
  • Coconut cream — Use thick coconut cream to add richness to the mousse. If unavailable, you can substitute with coconut milk, but the texture may be slightly lighter.
  • Kapampangan bread — Look for traditional Kapampangan bread, such as "pan de sal," which has a slightly sweet and soft interior. Toasting the bread adds a delightful crunch to the canapés.

Tips & Tricks

  • For an extra burst of flavor, you can add a dash of Kapampangan vinegar to the salmon mousse mixture.
  • If you prefer a spicier kick, you can add a pinch of Kapampangan chili powder or finely chopped chili peppers to the salmon mousse.
  • Experiment with different herbs and spices to customize the flavor profile of the canapés.
  • To save time, you can prepare the salmon mousse a day in advance and assemble the canapés just before serving.
  • If you don't have a food processor, you can finely chop the salmon fillet and mix it with the other ingredients using a fork.
