Preparation
-
1.Rinse the rice under cold water until the water runs clear. Drain well.
-
2.In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and translucent.
-
3.Add the rice to the pot and stir to coat it with the onion and garlic mixture.
-
4.In a separate saucepan, bring the chicken broth to a boil. Pour the boiling broth over the rice and stir well.
-
5.Add the ground cumin, ground coriander, annatto powder, salt, and black pepper to the pot. Stir to combine.
-
6.Reduce the heat to low, cover the pot, and let the rice simmer for about 20 minutes, or until all the liquid is absorbed and the rice is cooked.
-
7.While the rice is cooking, marinate the chicken breasts in the lime juice for 10 minutes.
-
8.Heat a grill or grill pan over medium-high heat. Cook the chicken breasts for about 6-8 minutes per side, or until cooked through. Let them rest for a few minutes, then slice into strips.

9.In a separate pan, sauté the diced bell peppers, carrot, and frozen peas until tender-crisp.
-
10.To serve, place a generous portion of the seasoned rice on a plate. Top with sliced grilled chicken and sautéed vegetables. Garnish with fresh cilantro.
Treat your ingredients with care...
- Chicken breasts — Marinating the chicken in lime juice adds a tangy flavor and helps tenderize the meat. Ensure the chicken is fully cooked before slicing and serving.
- Annatto powder — Annatto powder gives the rice its vibrant yellow color. If you can't find annatto powder, you can substitute with turmeric powder for a similar hue.
Tips & Tricks
- For added flavor, you can cook the rice in coconut milk instead of chicken broth.
- Feel free to customize the sautéed vegetables by adding your favorite Honduran ingredients like plantains or yuca.
- Serve the Nasi Kombos with a side of Honduran hot sauce for an extra kick of heat.
- If you prefer a spicier version, add a chopped jalapeño or habanero pepper to the sautéed vegetables.
- Leftover Nasi Kombos can be stored in the refrigerator for up to 3 days and reheated for a quick and delicious meal.
